    Adjust rack to top position and preheat oven to 425 degrees. Wash and dry produce. Dice potatoes into ½-inch pieces. Trim, peel, and cut carrot on a diagonal into ½-inch-thick pieces. Strip half the thyme leaves from stems; roughly chop leaves. Peel and mince or grate garlic . Trim and thinly slice scallions , separating whites from greens.

    Toss potatoes on one side of a baking sheet with a drizzle of olive oil ; season generously with salt and black pepper . Toss carrots on empty side with a drizzle of olive oil; season with salt and pepper. Roast on top rack until golden brown and crispy ⏱️ 25 minutes .

    Meanwhile, pat ranch steak dry with paper towels; season generously all over with salt and pepper. Heat a drizzle of cooking oil in a large pan over medium-high heat.
